Receta de confinamiento: Aunque las hago muchas veces, no las había puesto en el blog, así que ahí va mi receta de cariocas o tigres.
INGREDIENTES:
1/2 Kilo de Mejillones
1/2 cebolleta
100 grs. de gamba pelada
2 cdas de harina
Leche y caldo de los abrir los mejillones
Cayena
Sal, Pimienta
Huevo, pan rallado y harina
Aceite suave para freír
PREPARACIÓN:
Limpiamos los mejillones y les quitamos las hebras.
En una cazuela profunda ponemos los mejillones y un chorretón de vino blanco. Tapamos y les damos tres hervores, vamos que los llevamos a ebullición, volteamos la soperá y volvemos a poner al fuego para que hierva tres veces.
Quitamos las conchas, las guardamos y colamos el caldo. Reservamos.
Preparamos el relleno: En una sartén con un chorrito de aceite sofreímos la cebolleta picada muy finita. Añadimos las gambas picadas y la carne de los mejillones bien picada.
Ponemos la cayena en trocitos.
Añadimos la harina, removemos bien y la mojamos con leche y caldo de los mejillones hasta lograr una masa tipo croquetas.
La dejamos enfriar.
Rellenamos con la masa las conchas de los mejillones, las pasamos por harina, huevo batido y pan rallado.
En este punto las podemos congelar.
Las freímos en aceite bien caliente y las ponemos en un plato con papel absorbente.
Servimos.
